Kumda Aloo Ki Sabzi  
 
Serves 6

Ingredients
250 gms - Pumpkins 1 Tsp - Finely Chopped Green Chillies
250 gms - Potatoes 1 ½ Tsp - Salt
3 Tbsp - Oil 1 Tsp - Coriander Powder
A pinch - Asafoetida 1 Tsp - Mango Powder
¼ Tsp - Mustard Seeds 1 Tsp - Red Chilli Powder
¼ Tsp - Cumin Seeds ½ Tsp - Turmeric Powder
¼ Tsp - Nigella Seeds
( Hindi Term Kalonji )
Water to Pressure Cook
¼ Tsp - Fenugreek Seeds 4 Tbsp - Chopped Coriander
Leaves
2 Nos - Bay Leaf  

Garnish
Chopped Coriander Leaves

Method
1. Cut Pumpkin and Potatoes into medium size pieces.
2. Heat Oil in a pressure cooker and add Asafoetida, Bay Leaf ,Nigella Seeds,
Cumin Seeds,Fenugreek Seeds and Mustard Seeds.
3. Add Green Chillies and then add Potatoes and Pumpkin to it.
4. Add Salt and Turmeric Powder to it and also add Water.Pressure Cook for 1 Whistle.
5. Open the Cooker and then add Coriander Powder,Mango Powder and Red Chilli Powder to it. Mix gently and add more Water if needed to get the desired consistency.Add Coriander Leaves and mix well.
6. Check the Seasoning and adjust accordingly.
7. Serve hot garnished with Chopped Coriander Leaves.
